Abstract

In an effort to better prepare pre-service candidates to work with all students and to respond to the current collaborative team teaching trend within New York City public schools, the authors who are professors of bilingual education and inclusive education/disability studies, respectively, combined their student teaching seminars in bilingual education and childhood education, in order to: (1) provide a model of co-teaching as well as an experience and perspective of being a student in a classroom with two teachers; (2) provide pre-service candidates with ongoing access to the expertise of two professors during their student teaching experience; (3) engage pre-service teachers in critical conversations about identifying and resisting deficit constructions of both emergent bilingual students and students with disabilities; (4) engage in a self-study of teaching practice within this collaborative context; (5) consider how well our respective programs currently prepare pre-service teachers. The Self-Study of Teacher Education Practices approach gleaned data from the co-instructors’ weekly reflective journals and student evaluations to reveal multiple benefits of a collaborative classroom context for pre-service teachers as well as the professors. These benefits included a rethinking of academic structures, spaces for interconnectedness across fields, and increased professor and student learning. The findings challenge teacher educators to consider whether or not a traditional approach to teacher preparation truly offers pre-service teachers the tools to serve diverse students. The authors call on schools of education to transgress traditional academic boundaries to adequately prepare pre-service teachers for the 21st century classroom.

Abstract

Purpose

Partial least squares structural equation modeling (PLS-SEM) has attracted much attention from both methodological and applied researchers in various disciplines – also in hospitality management research. As PLS-SEM is relatively new compared to other multivariate analysis techniques, there are still numerous open questions and uncertainties in its application. This study aims to address this important issue by offering guidance regarding its use in contexts with which researchers struggle.

Design/methodology/approach

The authors examine the most prominent questions and answers posed in a well-known PLS-SEM discussion forum. The authors do so by using a text analysis technique to identify the most salient topics.

Findings

The data analysis identifies three salient PLS-SEM topics (i.e. bootstrapping and significance testing, higher-order constructs and moderation).

Research limitations/implications

The results allow us to address the PLS-SEM community’s main methodological issues. The authors discuss each area separately and provide explanations and guidelines.

Practical implications

The guidelines on the most important PLS-SEM topics provide decision-making and application aids. In this way, the authors make a decisive contribution to clarifying ambiguities when applying the PLS-SEM method in hospitality management research and other disciplines.

Originality/value

There has as yet been no systematic analysis of this kind in the field of PLS-SEM; the authors, therefore, present the first research results. The findings and recommendations provide guidance for PLS-SEM applications in hospitality research and practice.

Abstract

Purpose

The present research was envisaged with an aim to optimize the system and the product responses for the development of tomato pomace-incorporated corn-based extrudates employing central composite rotatable design and determine its proximate, lycopene, consumer acceptability and storage studies.

Design/methodology/approach

Lycopene-rich extrudates were developed from corn flour blended with different levels of tomato pomace. The independent extrusion variables, namely, feed composition (95:5 to 75:25), feed moisture (12–20%), screw speed (200–600 rpm) and barrel temperature (125–185 °C), were studied to determine their influence on dependent variables, namely, specific mechanical energy, hardness, water solubility index, lateral expansion, water absorption index, bulk density and color.

Findings

All of the quality parameters were significantly (p < 0.05) influenced by independent variables. The regression models obtained for all the responses showed high coefficients of determination (R2 = 0.85–0.95). The optimum conditions for the development of tomato pomace-incorporated corn-based extrudates were feed composition (90:10), feed moisture (14%), screw speed (300 rpm) and barrel temperature (170 °C). The moisture, fat and carbohydrate contents of the extrudates were significantly reduced, whereas protein, ash and fiber were significantly (p < 0.05) enhanced after the incorporation of tomato pomace. Aluminum laminates were found to be the suitable packaging materials for extrudates for a period of 120 days in comparison to high-density polyethylene packages.

Originality/value

As far as the authors could possibly know, scanty literature exists wherein the tomato pomace has been utilized for the development of lycopene-rich corn-based extruded snacks. Such extrudates with significantly higher fiber and lycopene contents than corn flour will serve as a suitable alternative for the development of shelf-stable ready-to-eat extruded snacks.

Abstract

Purpose

Engineer-to-order (ETO) supply chains involve multiple companies for performing complex projects. The ability to effectively coordinate cross-business activities is essential to avoid delays, cost overruns and quality problems. Coordination is related to a number of contingent factors that need to be better comprehended. The purpose of this paper is to highlight such contingent factors and to analyse their effect on the occurrence of project delays.

Design/methodology/approach

A multiple case study is used to investigate the moderating factors affecting coordination in projects carried out in an ETO supply chain. Such factors are examined through a cross-analysis of six shipbuilding projects based on data from interviews, project documentation and clips from the media press.

Findings

In ETO supply chains, the engineering and production activities involve mutual interdependences that need to be coordinated. The findings suggest that both the integration of engineering and production and the production capability are the most critical factors influencing coordination in an ETO supply chain.

Research limitations/implications

The study was carried out within shipbuilding projects as a setting to represent the ETO domain. To extend the findings, further research can examine other types of projects, such as: oil and gas, construction, military and aerospace.

Practical implications

In practice, there is no “one-fits-all” solution for coordination. Each project represents a unique context which has specific objectives, actors and constraints. From that perspective, this study provides a basis to comprehend coordination in a complex setting.

Originality/value

This study builds knowledge upon coordination by generating a number of propositions regarding the effectiveness of coordination on avoiding delays in complex projects carried out in ETO supply chains. Focusing on the engineering and production activities, the authors extend the existing theory by demonstrating that coordination can vary according to the level of several moderating factors.

Abstract

Purpose

The purpose of this paper is to illuminate motivations and “pull” factors of academics engaging in knowledge transfer (KT).

Design/methodology/approach

In total, 15 in‐depth interviews were conducted with experienced, KT active (KTAs) academics to reveal their motivations and pull factors for engaging. Data were transcribed and submitted to template analysis to achieve qualitative conceptual “saturation”, from which a conjuctural analysis of conceptual relations was derived.

Findings

From the data, seven thematic areas were inducted: values‐in‐practice, motivations and “buzz moments”, purposive activities, the academic context, the journey of the KTA, pedagogy and perceptions of risk.

Research limitations/implications

The interview sample (12 males, three females) of active KTAs can be seen as a representative and authentic regional sample from the Midlands – who had carried out both teaching, research and KT aspects within their academic roles. In total, 120,000 words of dialogue were candidly reported, attesting to conceptual coherence.

Practical implications

The results concur with some existing literature on conceptualising the KTA as an academic intrapreneur, but also highlight aspects of how this role conceptually differs from non‐KTA academics. This has implications for the recruitment, development and retention of KTAs, in addition to facilitating their roles in higher education institutions (HEIs).

Originality/value

This paper constitutes a unique induction of a conceptual model for a relatively new economic and operational phenomenon in HEIs: the KTA. The paper contrasts with existing literature on the barriers and challenges to KTA work by emphasis on the positive and motivational aspects of the role.

This chapter presents Virtual Exchange (VE) and Simulation as a pedagogical strategy to train pre-service teachers. Through VE, students–teachers from geographically distant locations come together with the aim of participating in a simulation. The simulation, in turn, presents a scenario and highlights several educational challenges that pre-service teachers must solve collaboratively. In so doing it, language skills, digital competence, and intercultural competence are developed. This chapter offers an overview of Virtual Exchange + Simulation, presents a complete simulation in case other teachers want to replicate the experience, and presents some of the most relevant findings out of the experience.
